Valserena
Valserena Reggiano Solo di Bruna is the very pinnacle of the world's most famous PDO cheese. In other words, it's the best of the best.
Valserena is the oldest Parmigiano Reggiano dairy in Parma and one of only four members of the Consorzio di Sola Bruna (Brown Cow Consortium). They are now run by the 5th generation of the family, Giovanni Serra and his sister Antoinetta. Antoinetta is a veterinarian and ensures the highest standards of care for their cows.
Valserena is one of the last true farmstead producers of Reggiano. This means they grow the feed, raise the animals, and make these cheese all at their farm. From both an animal welfare and flavour point of view, this is a huge deal.
The rare breed Sola Bruna cows (Brown Cows) produce far less milk than other dairy cows. However the milk has a unique quality being far richer, creamier and higher in protein. It results in a deep, rich flavour and a unique sweetness. Valserena make only 14 cheeses per day and are in very high demand around the world. We are absolutely delighted to have secured an allocation for Australia.
