Located in Oita prefecture of Kyushu, Kushino grows their Yuzu without the use of pesticides or chemical fertilisers. The farm is located in a picture perfect Japanese valley. The Yuzu trees are planted on the very steep hillsides whilst the chilli is grown on the narrow flat fields of the valley floor. At the correct time of the year the family collect the yuzu, peel them, then stone grind the peel with salt. Chilli that has been aged in salt for a year is then added. The family live and breath yuzu and hand produce everything themselves. The small jars are deceptive. All you need is a teeny dab of this explosive paste.
